Valrhona has developed Ivoire 35% to offer gastronomy professionals a low-sugar white chocolate. This allows for lighter gourmet recipes, for a reasoned indulgence. Perfect for ice creams, frozen logs and sorbets, this white pastry chocolate can also be used for creamy creams, ganaches and mousses. Amateur and professional chocolatiers also use it as couverture chocolate to coat homemade chocolate bonbons and make beautiful moldings.
