Description

Its curved blade includes a serrated scraper on the opposite side of the cutting edge. It is used to clean organic young shoots ans vegetables to retain their vitamins.

The curved bird's beak blade is ideal for turning vegetables, the fine, pointed blade is ideal for incising and peeling mushrooms, and the scraper back allows for gentle cleaning of young vegetables without removing the skin, in order to preserve maximum vitamins. Blade length - 7 cm. Sandvik's modified 12C27 stainless steel developed for Opinel is renowned for its sharpness and ease of maintenance. The stainless steel capable of undergoing the heat treatment that gives it its good hardness is called martensitic. It has a carbon content at least equal to 0.40% which allows to obtain a very satisfactory cutting edge without being sensitive to corrosion.
Beech is the wood most used for the manufacture of Opinel handles. Coming from French farms, it is hard, resistant and easy to work. It has a homogeneous appearance and its light color varies from yellow to pink. It is recognizable by the presence of many small dark lines. The handle is varnished to be better protected against humidity and dirt.
