Description
The Kaffir lime fruit looks like a lime but smaller and with a cracked skin. It does not contain any juice, which is why only the peel is used in the making of curry pastes. The fruit and the leaf are rich of an incredibly perfumed essential oil, reminding the perfume of the lemon verbena and the ginger. Very used in Thai, Indonesian, Malaysian and Reunionese cuisine, in satays, for soups, rice, chicken or fish, without putting a lot so that it tastes. A good idea in gin and tonic, martini or rum to subtly flavour it.
