Today, the bay leaf is a must in the kitchen. It lends itself well to anything that simmers in a large pot, stews and sauces of all kinds. It pleasantly enhances soups made from legumes or tomatoes. It is an essential ingredient in lentil dishes. Laurel can also be used as an infusion for a soothing herbal tea that promotes digestion.
TIP : Add a few leaves to the cooking water for pasta and rice to give them more flavor. Add a bay leaf or two to your favorite olive oil to flavor it. It will be delicious poured over a pasta dish or pizza when ready to serve.
