Description
For the production of its purée, Maison Ponthier has selected the prestigious Alphonso mango from Ratnagiri. Mangoes from this region are reputed to be among the best in the world, and the Alphonso variety is the most prized among dozens of other varieties. The coastal region of Ratnagiri guarantees excellent fruit quality thanks to high humidity and a soil that is both acidic and very rocky. In Maison Ponthier's partner plantations, the trees are abundantly irrigated as soon as the fruit reaches the size of a grape, with almost 50 liters of water per day per tree. Strict control of the Brix level of the mangoes ensures that they are harvested at full ripeness. Small in size, highly concentrated in sugar and pigments, they are perfectly fragrant, fleshy and non-fibrous.
