Interest of frozen : Keep your bag of escalopes in the freezer. At any time you just have to take out your escalope still frozen, color it in a frying pan at medium heat 1 minute on each side. Then finish cooking in the oven at 180°C / 350°F for 3 to 4 minutes.
Rougié foie gras escalopes are the only ones that are frozen immediately after slaughter. They have a melting rate of less than 10% and a taste identical to refrigerated foie gras. Moreover, they are ideal for receptions since they can be pan-fried directly and reheated in the oven just before serving.
