Sucrose Esters

Sugar Esters help maintain the stability of food products.

They are often used in baked goods, cereals, ice cream and sauces. They prevent ingredients from separating, make it easy to whip and give stability to foods.

The texture of the sponge cake is fine, and it retains its egg color and flavor. Easy to prepare, stable in appliances (2-3 hours), improved volume (10-20%, creates a finer batter and uniform texture, and longer shelf life at room temperature).
