ROASTED PORK SHOULDER SANDWICH

Ingredients
The meat
- 1kg (2 lb) roasted beef shoulder
- 500 ml (2 cups) beer
- 1 onion, chopped
- 3 garlic cloves, chopped
- 500 ml (2 cups) BBQ sauce
Sandwich
- 2 onions, thinly sliced
- 12 to 16 slices pepperoni
- 45 ml (3 tbsp.) oil
- 60 ml (4 tbsp.) vinegar
- 6 to 8 brioche rolls
- 60 ml (4 tbsp) garlic butter
- 90 ml (6 tbsp) BBQ sauce
- 6 to 8 slices provolone cheese
- 1 apple, thinly sliced
- Salt and pepper to taste
Preparation
- Preheat oven, rack in center, to 160°C (325°F).
- In a casserole or roasting pan, add meat, beer, onion, garlic and BBQ sauce, cover and bake for 5 hours.
- On the work surface, shred the meat.
- Meanwhile, in a hot frying pan, brown the onions and pepperoni in a little oil.
- Add vinegar and stir. Check seasoning.
- Open each loaf in half and brush with garlic butter.
- Top with the shredded meat, BBQ sauce, provolone, onion and pepperoni mixture and apple.
- Keep warm in the oven until ready to eat.
